MILLING ACTIVITIES

Through our milling activities, we want to ensure that contract farmers receive fair compensation for high-quality organic grain. We currently mill about half of our flour with an Austrian stone mill, the Osttiroler A700 MSM. We currently have five contract farmers.
 
 

 

 

SOURDOUGH PRODUCTS 


Sourdough is a living culture where wild yeasts and lactic acid bacteria ferment the grain used in the dough. Sourdough creates a pleasant texture, mouthfeel, and deeper flavor in bread. The intention of sourdough baking is to make bread in the same way as it was made thousands of years ago. Sourdough bread is bread that has been leavened using natural methods - without commercial yeast.

 
 

 

 

SHOP-CAFÉ 
The shop-café has been implemented in collaboration with Frukt Coffee Roasters, a coffee roastery operating in Kakola.

To help curb the current Coronavirus epidemic situation, we have closed our shop-café from daily operations until further notice.
